Instructions:

Prepare the Yogurt:
In a bowl, mix the Greek yogurt with honey or maple syrup and vanilla extract, if desired, for added sweetness and flavor. You can adjust the sweetness to your preference.

Layer the Parfait:
In a clear glass or jar, start by adding a layer of the sweetened yogurt at the bottom. Then, add a layer of fresh mixed fruit on top of the yogurt. Follow with a layer of granola.

Repeat the Layers:

For the crust:

1 ½ cups all-purpose flour
½ cup unsalted butter, softened
½ cup granulated sugar
1 egg
½ teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon salt

For the topping:

8 oz cream cheese, softened
¼ cup powdered sugar
½ teaspoon vanilla extract
2 tablespoons milk or yogurt (optional for a lighter texture)

For the fruit topping:

1 cup strawberries, sliced
½ cup blueberries
½ cup kiwi, sliced
½ cup pineapple, chopped
½ cup grapes, halved
2 tablespoons honey or fruit preserves (optional, for glaze)

Instructions:

Make the crust:
Preheat your oven to 350°F (175°C).
In a bowl, beat the butter and sugar until light and fluffy.
Mix in the egg and vanilla extract.

Instructions:

1. Make the Tart Crust:

In a food processor, pulse the flour, powdered sugar, and butter until the mixture resembles coarse crumbs.
Add cold water, one tablespoon at a time, and pulse until the dough comes together.
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface and press it into a tart pan with a removable bottom. Trim the edges.
Prick the bottom of the crust with a fork and line it with parchment paper. Fill with pie weights or dried beans.
Bake for 15 minutes, remove weights and parchment, and bake for another 5-7 minutes until golden. Let it cool completely.

2. Prepare the Pastry Cream:

In a saucepan, heat the milk over medium heat until it begins to simmer.
In a bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
Gradually add the hot milk to the egg mixture while whisking constantly.
Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until thickened.
Remove from heat, stir in vanilla extract and butter, and let it cool to room temperature. Cover with plastic wrap to prevent a skin from forming.

3. Assemble the Tart:

Spread the cooled pastry cream evenly over the tart crust.
Arrange the fresh fruits decoratively on top of the pastry cream.

4. Add a Glaze (Optional):

Warm the apricot jam or honey in the microwave or on the stovetop until it’s runny.
Lightly brush the glaze over the fruit for a shiny finish.
